Great Depression Casserole

Another classic recipe from the Great Depression era of the 1930s. Bologna became a staple ingredient during this decade. Filled with delicious, savory flavors, this budget-friendly casserole offers a unique combination of beans, bologna, bacon, pork and cheddar cheese.

Serves 8 | Prep. time 10 minutes | Cooking time 35 minutes


1 large onion, chopped (about 1 cup)

1 tablespoon garlic, minced

4 slices bacon, chopped

1 medium bell pepper, chopped (about 1 cup)

2 (15-ounce) cans chili with beans

1 (15-ounce) can pork and beans (do not drain)

1 cup shredded cheddar cheese

1½ pounds bologna, cut into ½-inch cubes


Preheat the oven to 400°F. Grease a 3-quart baking dish with cooking spray or melted butter.

Cook the bacon in a skillet for 4–5 minutes until crisp and brown. Add the bell pepper, onion and garlic; stir-cook for 5 minutes to soften the veggies.

Add the bologna and stir-cook for 5 minutes or until the edges turn evenly brown. Stir in the beans, pork and chili.

Add the mixture to the baking dish and bake for 20 minutes or until the cheese is melted. Serve warm.
